Going primal-ish in our daily lives wasn’t all that hard after all.  Sure, I miss pasta.  I miss bread.  But I can live without those things.  But eggs and sausage for breakfast every morning gets old.  That’s where these babies come in.  Coconut Flour Pancakes.  There are lots of alternative flour pancakes out there, but these are my favorite.  We even use these pancakes to make primal “Egg McMuffins”.  Yummy!

Coconut Flour Pancakes

4 eggs

1 1/4 cups of milk

2 teaspoons of vanilla

1 tablespoon of honey

1/2 cup of coconut flour

1 teaspoon of baking soda

a dash of salt

Heat the griddle or skillet up ahead of time.

In a bowl, beat up the eggs, then add honey, vanilla, and milk.  Mix well.

In another small bowl mix together coconut flour, baking soda, and salt.

Add dry ingredients to wet ingredients, mixing well.  I use a whisk to get all the lumps.

Grease the pan and make some pancakes!
